Aroma de la Mer is situated in the north east of Bali facing out across the sea towards the Bali Sea and the holly Mount Agung. A tranquil place for contemplating while watching the sunset with changing colours over the bays of Karangasem.

Time is not measured in hours here but by the setting and rising of the sun and the appearance of the full moon. By the gentle sea breezes of the dry season and the monsoonal downpours of the wet season. Here life continues onwards as it always has done – with a calmness and tranquility that leaves the mind and body soothed and peaceful.
Our architect's vision has been to set the restaurant in a natural haven, by blending the sloping contour of the land - with the

The restaurant is designed from sustainable materials and built in ways that are in integrity with nature. Bamboo is a natural material an unbeliveable resorce which is growing fast. The design of our restaurant shows all the inherent strengths and versatility of bamboo with a natural gras roof. The design from bamboo build with the shape of a boat made a dream come true where we can stay, cook be creative in bliss with natural light, the ocean view and with comfort of a modern restaurant.

Das normale balinesische Essen basiert auf Reis, das die Grundlage jeder Mahlzeit auf Bali ist. Der Balinesische Reis kann dabei in bis zu drei Ernten gewonnen und in unterschiedlichen Geschmcksrichtungen zubereitet werden.
Serviert werden weißer Reis, aber auch schwarzer, roter oder gelber Reis.
Als Beilage dienen verschiedene kleinere würzige bis scharfe Gerichte wie Urab (Grüne Bonen mit Kokusnussraspeln), verschiedene Fische, Meerestiere oder auch Schweinefleisch, denn den hinduistischen Balinesen ist die Kuh heilig.
Verschiedene Zubereitungstechniken und das Kochen unterschiedlicher Gerichte kann man bei Made Putu lernen.


Eines meiner Lieblingsgerichte auf Bali ist das Nasi Campur. Campur bedeutet so viel wie gemischt von allem und Nasi ist der leckere, lockere Bali Reis.
Ein besonders schmackhaftes Nasi Campur erhält man bei meinem Diveguide Sama und seiner wunderbaren Frau. Meist stehen die beiden schon in den frühen Morgenstunden gegen 4 Uhr auf, um auf dem Markt alles frisch für das kleine Warung einzukaufen, was sie so für den Tag benötigen. Heute gab es würziges Hühnchengeschnetzeltes, sehr leckeres Tempeh, eingelegtes und gebratenes Schweinefleisch und leckere balinesische Sauce zum Reis, der nicht ganz einfach zu kochen ist.
Bin ich es gewohnt in Deutschland auf eine Tasse Reis 2,5 Tassen Wasser aufzukippen und meinen Reis nach ca. 10 Minuten essen zu können, so habe ich hier nur einen harten Klumpen vor mir.
Sama erklärt mir heute, dass es doch kinderleicht sei, Reis zu kochen. Zunächst einmal weicht man den Reis in Wasser ein und sammelt die dunklen Körner aus der Masse heraus. Der Reis steht dabei ca. einen halben Finger breit im Wasser. Nach ca. zehn Minuten einweichen, wird der Reis in ein Bambussieb geschüttet und das Wasser darunter in einem speziellen Topf aufgefangen. Bei kleiner Flamme dämpft man den Reis dann bis er gar ist und aufgegangen.
Im nächsten Schritt kippt man das restliche Wasser mit dem Reis in eine Schüssel und lässt den Reis dann weitere zehn Minuten einfach ziehen.
Danach wiederholt man die Prozedur: Man kippt den Reis in ein Bambussieb, fängt das abfließende Wasser in einem Topf auf. Erneut dämpft man den jetzt bereits aufgegangenen Reis mit dem restlichen Wasser auf kleiner Flamme. Nötigenfalls kann man dann auch kaltes Wasser in den Topf hineingießen, da er ja keinen direkten Kontakt mit dem Reis hat!

Aroma de la Mer is situated in the north-east of Bali in an old
fishing village called Amed. Therefor all the seafood is fresh from the local fishermen and you can taste delicious fresh seafood, culinary highlights of the Balinese cusine and you will get new insights. No fish will make it into Aroma de la Mer that has no crystal clear eyes and carries the freshness of the wide Bali Sea because Made and Putu are the daughters of local fisherman from Jemeluk.

Made and Putu have many years experience preparing Balinese and Western food in
different restaurants in Bali. They want to share the mystery of Balinese cooking with there guests and teach you the art of Balinese cooking. They want to invite you to taste the real flavor of Bali in there cooking classes!

Aroma de la Mer starts each cooking class with the early morning market tour to teach and show you which fresh ingredients you can buy.
